Main ingredients
½ lb. tender asparagus, chopped into 1-inch size (discard the ends if hard)
6 tablespoon, butter
2 tablespoon, olive oil
4 tablespoon, garlic crushed
2 cup, Dry Vermouth
¼ teaspoon, crushed red pepper
Salt to taste
Black pepper freshly ground to taste
3 lb. medium fresh shrimp, shelled
6 tablespoon butter
3 tablespoons fresh flat Italian parsley, finely chopped
2 medium tomatoes, finely chopped
1 cup heavy cream
Garnish
Chopped fresh flat Italian parsley, finely chopped
1 teaspoon extra virgin olive oil
Parmesan cheese, freshly grated for garnishing
Step by step instructions
Follow these proven steps to make this your own
Step1- Cook Pasta
On medium heat, in a large saucepot add 6 quarts of water and salt and bring it to a boil. Add angel hair pasta and cook for 10 to 15 minutes until it is all Dante (firm to a bite). Drain the pasta and keep aside.
Step2- Sauté Asparagus
In a sauté pan add 1 tablespoon butter and add asparagus. Season with salt and pepper. Sauté and cook until slightly tender but firm to bite. Remove and keep aside.
Step3- Make Sauce
Heat a large skillet over medium-low heat. Add 4 tablespoon butter, oil and garlic and sauté. Cook for 30 seconds, do not brown the garlic. To the skillet add vermouth, red pepper flakes, simmer 5 minutes to reduce liquid. Season with salt and black pepper.
Step4- Cook Shrimp
Add shrimp to the sauce. Cook for 2 minutes one side and then flip them and cook for another minute. Once shrimp cook, add 3 tablespoons of butter. Let the butter melt and combine with the sauce.
Step5- Add Asparagus and Tomatoes:
Add sautéed asparagus and parsley and combine. Now add tomatoes and simmer for few seconds on medium low heat.
Step7- Serve
To serve, first put pasta on a serving dish then put shrimp and asparagus on top. Garnish with parsley. Drizzle 1 teaspoon of olive oil. Sprinkle with freshly grated Parmesan cheese. Serve hot.
Step6- Cook with Pasta
Add pasta to the skillet to coat with the sauce. Finally add heavy cream and combine. Simmer for a few seconds and close the heat.
