Ingredients
Use these easily found ingredients.
Main ingredients
7-ounce packet rice sticks noodles (found in the Asian section of the grocery stores)
2 tablespoon vegetable oil
1 cup medium shrimp, peeled, deveined
2 chicken breast, cut into ½ inch small strips
4 cloves garlic, minced
½ teaspoon ginger, minced
3 cups coleslaw mix( shredded carrots and green and red cabbage)
½ cup cherry tomatoes halved
2 green onions, greens only, cut into 2-inch length
1 cup cilantro, finely chopped
2 tablespoon dark sesame oil
2 lime wedges for garnishing
For Sauce
½ cup soy sauce
3 tablespoon rice wine vinegar
3 tablespoon curry powder(found in the Indian section of the grocery stores)
2 tablespoon hoisin sauce
1 tablespoon Sriracha sauce
3 tablespoon lime juice
1 teaspoon black pepper
Step by step instructions
Follow these proven steps to make this your own
Step1- Cook Noodles
Cook rice noodles as per directions. When done rinse under water and drain. Toss 2 tablespoon olive oil in the noodles. Keep it warm.
Step2- Make the sauce
In a mixing bowl add soy sauce, rice wine vinegar, curry powder, hoisin sauce, sriracha sauce, lime juice and black pepper. Combine well and keep it aside.
Step3- Stir fry everything
Heat sesame oil in a large wok on medium high heat. Add ginger and garlic and sauté. Do not let it brown. Quickly add chicken and toss for a minute, then add shrimp and toss for another half a minute. Add the coleslaw mix and toss on high heat for another minute. Add cherry tomatoes and green onion greens and toss lightly.
Step4- Add Sauce
Add sauce to the wok and toss until everything is evenly coated with the sauce.
Step5- Add Noodles
Finally, add cooked noodles and toss again. Add half the cilantro and combine lightly.
Step6- Serve
Serve the noodles on a serving dish. Squeeze some lime on top. Top it with rest of the cilantro. Put two wedges of lime for garnishing on the side. Enjoy
