Chicken Fajitas

Ingredients

Main ingredients
1 lb. Chicken Breast
1/3 cup vegetable oil
1/3 cup tequila (optional)
½ cup lime juice, freshly squeezed
½ teaspoon liquid smoke (optional)
Salt to taste
1 large white onion, sliced in crescent
1 large green poblano pepper, stem and seeds removed and sliced lengthwise
2 large red jalapeños

Fajita Seasoning
½ teaspoon garlic powder
½ teaspoon ground cumin powder
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon, black pepper, freshly ground
¼ teaspoon cayenne pepper
½ teaspoon corn starch


Step by step instructions

Follow these proven steps to make this your own

Step1- Make the Marinade

In a large flat air tight container add, fajita seasoning, 1/3 cup vegetable oil, minced garlic, black pepper, tequila, lime juice, salt and liquid smoke. Combine everything.

Step2- Add Chicken to the Marinade

Put the sliced chicken breasts in the marinade and rub the marinade all over properly. Close the lid of the container and shake it well. Refrigerate for 30 minutes.

Step3- Sit Chicken at room temperature:

Remove the marinated chicken from the refrigerator and let it sit at room temperature for 15 minutes.

Step4- Cook Onions & peppers

In the meanwhile, heat a seasoned cast iron skillet on high heat and dribble some oil on it. Add the poblano peppers and red jalapeno peppers and cook for two minutes on medium-high until they are charred but not soft. Remove and keep it aside. Now add onions and cook until they are sweet and caramelized. Remove and keep it aside.

Step5- Grill Chicken

Once again heat the same cast iron skillet on high heat (you can also use your outside grill). Remove the marinated chicken from the marinade and put it on the hot skillet. Cook on one side for 15 to 20 minutes and then flip it over and cook for another 15 to 20 minutes. When done remove from the skillet and let it sit for 5 minutes for the juices to soak in. After 5 minutes take a sharp knife and cut it in a slanted manner, against the grain of the chicken breast.

Step6- Serve

Heat a Fajita skillet on real high heat and drizzle a teaspoon of oil on it. Spread caramelized onions at the bottom and put some on the side. Add the sliced chicken pieces. Top it with charred poblano and jalapeno peppers. Serve the sizzling hot fajitas with tortilla, lettuce, pico de gallo, sour cream, Mexican rice, guacamole, shredded cheddar cheese and some refried beans. Enjoy.

Tip

This recipe specifically calls for the boneless breast meat of chicken, if you want to make it just like the way the restaurants makes it. You can avoid the liquid smoke but then you have to cook it on the outside charcoal grill to get the smoky flavor.
