Main ingredients
1 teaspoon olive oil
1 lb. Italian sausage ground, mild
4 cups chicken broth
2 cups water
1 tablespoon chicken bouillon powder
1 medium onion, finely chopped
¼ teaspoon garlic minced
2 large, russet potatoes, scrubbed and rinsed then sliced into halves, halves diced into 1/8 to 1/6-inch slices
Salt to taste
¼ teaspoon black pepper
¾ cup bacon bits
2 cups fresh kale, lightly packed, chopped to bite size
1 cup heavy whipping cream
For Garnishing
Fresh parsley, finely chopped for garnishing
Romano cheese, freshly grated for garnishing
Step by step instructions
Follow these proven steps to make this your own
Step1- Cook sausage
Heat a skillet over medium-low heat and cook the sausage. Do not brown it. Close the heat and keep it aside.
Step2- Boil broth
On medium-high heat in a large sauce pot add water, chicken broth, and chicken bouillon powder. Bring it to a boil.
Step3- Add Sausage and Potatoes
To the broth, add cooked sausage, onions, garlic, salt to taste, and pepper. Combine and add potatoes. Cook for 20 minutes until the broth is slightly thick and the potatoes are slightly soft.
Step4- Add Bacon, Cream, and kale
Finally add bacon bits, heavy cream, and kale and cook for 5 minutes .
Step5- Serve
Ladle the soup into a serving bowl. Garnish with freshly grated Romano cheese and serve hot.
